This is my mom's traditional Thanksgiving side dish. It's almost like a dessert. Maybe that's why it's always been my favorite!
SWEET POTATO SOUFFLE
2 large cans sweet potatoes, mashed
1 cup sugar or splenda
1/2 tsp salt
2 eggs, well beaten
1/3 cup melted butter
1tsp vanilla
*Mix well and put in a 9 x 12 pan.
Topping
1 cup brown sugar
1/3 cup flour
3/4 cup softened butter
1 1/2 cups chopped pecans
*Mix and sprinkle over sweet potatoes
Bake at 350 degrees for 35-40 mins.
